Meatless Meals for Lent (Or Just Because)


Hey Reader,

Those Fridays in Lent always sneak up on me a little, and suddenly I’m staring into the fridge trying to figure out what I can make. Bonus? These recipes tend to be less expensive than a lot of the meat-focused meals I can cook and definitely less than heading out for a Friday Fish Fry.

I may make these for Lent, but they stay in the rotation all year long, so make sure to bookmark them for later, too!

Meatless Meals for Lent and Beyond

Sometimes you want something hearty, especially when winter seems like it'll never end. Instead of making a full pan of lasagna that takes forever to make and back, go with these Weeknight Lasagna Roll-Ups that are way faster and don't give you so many leftovers that you'll never finish them.

Spinach Soufflé sounds fancy and hard, but it's actually really easy to make and not fussy at all. Add a salad and a warm loaf of bread for one of my favorite vegetarian dinners.

In the same vein, Pesto Salmon is one of those dinners that looks impressive but barely takes any effort. It takes maybe 15 minutes start to finish, and the pesto does all the heavy lifting when it comes to flavor.

The savory glaze comes together fast on my Miso Glazed Salmon, and it pairs perfectly with rice or simple vegetables. Side note - by me, Aldi has the cheapest quality salmon I find anywhere, and it's less expensive than many beef cuts now.

These recipes work great for Lent restrictions, but they're delicious any night of the week when you want to skip the meat. What's your go to this time of year?
