Pasta is always a win around here, and the fact that I can make Cacio e Pepe in about 15 minutes, including the time it takes to boil the water, makes it a fan favorite. It never fails to amaze me how four simple ingredients make such a fab dinner.

Buffalo Chicken Salad is my answer when I want something sorta spicy but still easy to make. It’s a variation on my 5-minute chicken salad that somehow works just as well for lunch as it does for a quick dinner.

When I want something warm and comforting but still simple, I go for a Caprese Panini. The melted cheese, fresh tomato, and toasted bread are the perfect little upgrade without any extra work - especially if I add a little jarred pesto.

Creamy Sun-Dried Tomato Salmon is easy enough to enjoy on a regular night, but it feels like takeout from a good restaurant. The sauce is rich and flavorful, turning a simple piece of salmon into something you’ll want to make again, too.
